A tart candied pineapple with fresh acidic top notes and a sweeter, saturated white-gummy body underneath. It gives juicy yellow-fruit brightness and tropical lift without being nothing but a thin pineapple top note. I also get a slight savoury/sulfur pineapple edge and a soft fluffy vanilla/marshmallow-like texture.
At around 7% it has enough body and identity to work as a standalone pineapple, but I think it is considerably more useful as a contributor.
I’ve used it at only around 0.3% in a busy blue-raspberry lemonade and it was still useful for adding pineapple gummy-brightness and extra lift. That is where this concentrate really earns its place for me: small amounts can add juicy pineapple body, acidic brightness and a tropical/candy edge without needing to turn the whole recipe into pineapple.
